对肝脏和肠道组织样本进行组织形态学分析,并检查肌肉成分。膳食补充生姜水提取物显着增强了氧化状态。特别是,G组鸟类表现出增强的抗氧化保护,肉类、肝脏和血清中超氧化物歧化酶活性升高;腿肉、肝脏和血清中过氧化氢酶活性升高;

The present study aimed to investigate the effects of an aqueous extract of ginger (Zingiber officinale) on the oxidative status of tissues, production performance, and meat quality of broiler chickens reared under commercial conditions. A total of 560 Ross 308 broilers of both sexes were randomly assigned to two groups: a control group (C), in which birds were fed a basal diet without supplementation, and a ginger extract-supplemented group (G), in which birds received an aqueous ginger extract at a dose of 0.03 kg per 100 kg of feed from 11 to 42 days of age. Each treatment group consisted of 14 pens (1.2 m² each), with 20 broilers housed in each pen. All pens were located within a commercial poultry house managed under standard production conditions. Body weight was recorded on days 1 and 42 of rearing. Feed intake was monitored throughout the experimental duration to calculate the feed conversion ratio (kg/kg). Bird mortality was recorded daily. At 42 days of age, two males and two females were randomly selected from each pen for slaughter and subsequent carcass dissection. Muscle, liver, and blood samples were collected to assess tissue oxidative status. Histomorphometric analyses were performed on liver and intestinal tissue samples, and muscle composition was examined. Dietary supplementation with the aqueous ginger extract significantly enhanced oxidative status. In particular, the G group birds exhibited increased antioxidant protection, as evidenced by elevated superoxide dismutase activity in meat, liver, and serum; higher catalase activity in leg meat, liver, and serum; and increased total antioxidant capacity in serum. Compared with the control group, birds receiving aqueous ginger extract exhibited a 43.5% reduction in liver inflammatory lesion score (2.286 vs. 1.329) and reductions of 28.6-42.9% in intestinal lesion scores. Ginger aqueous extract supplementation exhibited no significant effect on meat chemical composition (P > 0.05), except for a higher fat content (P = 0.025) and lower protein content in the leg muscles of male broilers (P = 0.004). There was also no effect on carcass tissue composition, except for a higher dressing percentage in male broilers (P > 0.05). Final body weight, feed conversion ratio and mortality did not differ between treatments (P > 0.05).In conclusion, dietary supplementation with aqueous ginger extract during the commercial rearing of broilers improved tissue antioxidant status and enhanced their health by reducing inflammatory changes in the liver and intestines, without adversely affecting their production performance.
